Food Tuesdays-Breakfast In One Dish

I like quiche. I like potatoes. I like to make quiche with a potato crust. This is a great weekend brunch dish

2 bags presliced cooked potatoes (scalloped)

4-5 eggs

1 cup cream

1 cup shredded cheese-I use a sharp chedder, or manchego or parmesan, nearly anything yummy would do-provolone, mozzerella, smoked gouda, feta….

1 onion-diced

2 cloves garlic-smashed and diced

1 cup finely diced veggies such as green or red pepper, asparagus tips, chopped zucchini, broccoli, whatever you like.

1 cup or so meat if you like, such as crumbled sausage, chopped ham or crispy bacon. Shrimp or scallops would be good too.

Oil/butter a pie pan and layer potato slices in pan sprinkling a little cheese into the slices to act as a glue. You may have left over potatoes…just save for another day.

Saute onion, garlic and veggies and meat in some butter and let cool a bit.

Whisk eggs with cream in bowl.

Mix all together, adding remaing cheese and pour into pie pan

Bake at 375-400 (depending on your oven) for 45 minutes or until set.
